Ingredients:

1 loaf of unsliced bread
½ cup Imperial Cheese
½ cup butter
paprika

Instructions:

1. Preheat oven to 350°
2. Remove crust from bread
3. Cut bread into 1” to 1 ½” squares
4. Blend cheese and butter
5. Spread mix onto bread squares
6. Shake on paprika
7. Bake for 10 minutes

Note: I used a French loaf and the Cheezies turned out quite tasty. I wasn’t sure what regular bread would taste like. Also, if you’re reading the original recipe card, there is a word between “unsliced” and “bread” that I couldn’t make out. So, I went with French bread…

Chocolate Chip & Oatmeal Cookies

Prep Time: 20 minutes
Cook Time: 10 minutes

Ingredients:

½ cup of any shortening
½ cup brown sugar
½ cup white sugar
1 egg beaten
1 tbsp water
½ tsp vanilla
¾ cup sifted flour
½ tsp baking soda
½ tsp salt
1 ½ cups quaker oats
1 ½ cups chocolate chips (or 1 package)

Instructions:

1. Preheat oven to 375°
2. Cream shortening and sugars thoroughly
3. Stir in beaten egg, water, and vanilla
4. Add sifted dry ingredients (flour, baking soda, salt), quaker oats, and chocolate chips
5. Drop with teaspoon on greased baking sheet
6. Bake for 10 to 15 minutes

Note: Check at 10 minutes! I did mine for 12 minutes and they turned out quite crunchy, if you like a softer cookie, try adjusting the ingredients and/or cooking for less time.

Blueberry Pie

Prep Time: 20 minutes
Cook Time: None

Ingredients:

  • 1 baked pie shell
  • 3oz cream cheese (room temperature)
  • 1/3 cup white sugar
  • 1 tbsp whipping cream
  • 2 ½ cups blueberries
  • 2 cups apple juice
  • ½ cup white sugar
  • ¼ cup corn starch
  • whipping cream

Instructions: Mix #1

  1. Mix 3oz cream cheese, 1/3 cup white sugar, and 1 tbsp whipping cream.
  2. Place to the side.

Mix #2

  1. Bring to a boil, 2 cups apple juice, ½ cup white sugar, and ¼ cup corn starch. Cook until thick, stir often. Then cool.
  1. Line the baked shell with Mix #1.
  2. Add 2 ½ cups of blueberries to Mix #2 once cooled.
  3. Pour mix #2 into the baked shell.
  4. Top with whipped cream.

Note: I used a premade pie shell and baked for 5-10 minutes until lightly browned. Original recipe card: BlueberryPie

Blueberry Cobbler

Prep Time: 20 minutes
Cook Time: 40-50 minutes

Ingredients:

  • 2 cups blueberries
  • 1/3 cup sugar
  • 1/4 cup flour
  • nutmeg
  • cinnamon
  • 3/4 cup butter
  • 3/4 cup brown sugar
  • 1 1/2 cup oats

Instructions:

  1. Preheat over to 350°.
  2. Add 2 cups of blueberries in a casserole dish.
  3. Mix together 1/3 cup sugar, 1/4 cup flour, and nutmeg.
  4. Sprinkle mixture on the blueberries in the casserole dish.
  5. In a separate bowl, mix and cream together 1/4 cup of butter, 1/4 c of brown sugar. Add and fold in 1/2 cup of oats.
  6. Put on top of mixture in the casserole dish by spoonfuls.
  7. Bake for 45 to 50 minutes.

Tip from Nana: Try less time! Check at 30 minutes to see if it’s ready. A similar apple cobbler recipe she found says 30 minutes.

Note: Based on the size of the casserole I used (9×9-2 inches deep), I tripled the butter, brown sugar, and oats because it didn’t quite cover the blueberries and didn’t seem as though it was going to be a thick enough crust. The original recipe called for ¼ cup butter, ¼ cup brown sugar, and ½ cup of oats. Ingredients in this recipe have been modified based on my experience.

Note: I added cinnamon, because everything tastes better (especially cobbler) with a little bit of cinnamon.

Spanish Delight

Cook Time: 30 minutes

Ingredients:

  • 1-2 lbs Extra Lean Ground Beef
  • ½ 1 large onion, chopped
  • ½ 1 large green pepper, chopped
  • ½ 1 large red pepper (optional), chopped
  • 1 can mushrooms (284mL can)
  • 2 cans stewed tomatoes (398mL can)
  • Chili powder
  • Garlic powder
  • Basil
  • Salt and Pepper
  • Thin noodles

Note: I added red pepper for colour and taste. If you do not include the red pepper, use 1 full green pepper. I added an extra can of mushrooms (because I like mushrooms, a lot). All spices are to taste. Add any spices of your preference. I used Cappellini as the thin noodle.
Instructions:

  1. Brown the extra lean ground beef.
  2. In a separate pan, brown chopped onions, green pepper, and mushrooms.
  3. Add stewed tomatoes to the beef.
  4. Add onions, green pepper, and mushrooms to the beef.
  5. Add spices.
  6. Let simmer.
  7. Boil noodles.
  8. Strain the noodles.
  9. Add noodles to sauce or serve.

Spanish-Delight

Chocolate Peanut Butter Squares

Prep Time: 5 minutes
Cook Time: 10-15 minutes

Ingredients:

  • ¼ cup butter
  • ½ cup peanut butter
  • 1-cup semi-sweet chocolate chips
  • 1 tsp vanilla extract
  • ½ cup marshmallows
  • 2-3 cups Rice Krispies

Note: I started with 2 cups of Rice Krispies in a separate bowl and poured the mixture on top and stirred until they were well coated. I added the 3rd cup based on how much additional mixture there was.

Instructions:

  1. Using a double boiler on medium heat, melt butter and peanut butter.
  2. Add chocolate chips; stir in vanilla when melted.
  3. Add marshmallows; stir until melted and well blended.
  4. Remove from heat and cool the mixture slightly.
  5. Add Rice Krispies, stirring until coated.
  6. Using a spatula, press into a buttered pan.
  7. Cool and then cut into squares.

Tip from Nana: Using a piece of paper towel, place over a couple of fingers and dab into butter and spread into the pan. Less mess!
