Ingredients:
- 1 baked pie shell
- 3oz cream cheese (room temperature)
- 1/3 cup white sugar
- 1 tbsp whipping cream
- 2 ½ cups blueberries
- 2 cups apple juice
- ½ cup white sugar
- ¼ cup corn starch
- whipping cream
Instructions: Mix #1
- Mix 3oz cream cheese, 1/3 cup white sugar, and 1 tbsp whipping cream.
- Place to the side.
Mix #2
- Bring to a boil, 2 cups apple juice, ½ cup white sugar, and ¼ cup corn starch. Cook until thick, stir often. Then cool.
- Line the baked shell with Mix #1.
- Add 2 ½ cups of blueberries to Mix #2 once cooled.
- Pour mix #2 into the baked shell.
- Top with whipped cream.
Note: I used a premade pie shell and baked for 5-10 minutes until lightly browned. Original recipe card:
